APPLE COOKIE (Elmalı Kurabiye)

So delicious! This was the husband's idea. An urgent phone call to Fatma Anne and a brisk walk to Tesco solved all our problems. Although I had serious doubts during the preparation (i.e. are we sure this will end up in a decent, edible cookie?), the end result was terrific. We had to restrain ourselves from eating the whole bunch.


Ingredients:
  • 200 g flour
  • 75 g margarine
  • 75 mL vegetable oil
  • 50 g sugar
  • 40 g icing sugar
  • Yogurt, 2 tablespoons
  • Baking powder, 2 teaspoons
  • Icing sugar for dusting

For filling:
  • 50 g walnuts
  • 2 medium sized apples
  • Cinnamon, 2 tablespoons

Preparation:
  • Heat the oven to 130°C (gas mark 1/2).
  • Add all the ingredients; flour, margarine, yogurt, oil, baking powder, sugar and icing sugar in a large bowl and knead until having a soft dough. If the dough looks dry, add a bit more oil or if it is too sticky, add a bit more flour. The dough should be soft, a bit wet, and malleable enough to be flattened.
  • Divide the dough in 4 pieces.
  • Take one piece, round in your palm and tap slightly on top. On a flour dusted surface, flatten with the help of a rolling pin to a small pancake size; app. 15cm in diameter.
  • In another bowl, mix the grated apples, chopped walnuts and cinnamon and mix all. I peeled the apples and grated in food processor. You should prepare this at the last minute because the apples start oxidizing immediately.
  • Cut the pastry in 4, creating triangles. Put the filling to the center, fold the large side first and the pointy end on top.


  • Cook in the oven for 20 minutes. (Preferably they should stay light in color. Mine turned a bit brownish at the ends but I hid them with icing sugar.)
  • Dust icing sugar all over and enjoy!
