EGGY POTATOES (Yumurtalı Patates)
I love this meal; not only because it is so easy to prepare, has both eggs in it and fried potatoes but also it reminds me of my dear friends, Evren and Perihan. They used to cook this for almost every breakfast I had in their house. Ohh, how wonderful it is to have breakfast, a really long one, with friends!

*: It is not a good practice to pour sizzling oil down the sink. Pour it into a glass bowl, and discard until it is cooled down.
Ingredients:
- Two baking potatoes
- 4 eggs
- Frying oil
- Salt
Preparation:
- Peal the potatoes, wash and dry with a towel, and cut them in small cubes.
- In a rather large pan, heat the frying oil and when it is sizzling hot, add the potatoes. (You don't need to add too much frying oil, since the potatoes are very small, lesser oil would be sufficient.)
- Before the little cubes get burned take them onto a paper towel.
- Discard the oil from the pan. (Be careful not to burn yourself!*)
- Whisk the eggs in a bowl, add salt.
- Take the fried potatoes back into the pan, heat for 1-2 minutes.
- Pour the egg mixture and gently swirl.
- Cook for 2-3 minutes and serve.
