COOKIES (Kurabiye)

Golden and crips outside, chewy and soft inside: these cookies are a treasure. On a saturday, this recipe will cheer up all cookie monsters out there. Not much a big deal as well, you can enjoy your very own cookies in less than 45 minutes!




Ingredients:
  • 125 g margarine
  • 400 flour
  • 100 g sugar
  • 60 mL vegetable oil (maybe some more to wipe your hands)
  • 60 mL yogurt
  • 1 egg (white and yolk seperated)
  • 1 teaspoon baking powder
  • Hazelnuts or dessicated coconut or both (for decoration)


Preparation:
  • Preheat the oven to 180°C.
  • In a bowl, sift the flour and add margarine, sugar, vegetable oil, yogurt, egg yolk (basically everything except egg white and decorations) and mix by squishing everything in your hand, then releasing; squish again, then release... until everything becomes homogenous. This cookie dough does not become a real dough, it stays in crumbles. Don't try to make it one, big, soft dough as we have in pogacas or bread.
  • From the dough which is in large crumbles, grab a walnut sized piece, squeeze in your palms to give shape.
  • Dip each piece into egg white.
  • Then either wrap them in coconut or just put a hazelnut on top, or just leave them as they are.
  • Arrange them all on a baking tray (I also use a parchment paper), cook for 30 minutes.
