FRIED AUBERGINES AND POTATO (Şakşuka)
The whole title is "Fried aubergines and potato with tomato sauce" which actually tells the whole recipe. This is a summer dish, best enjoyed in a warm summer night after a lazy day. Green pointy peppers should accompany aubergines and potato but please feel free to enjoy it without me, I don't have green peppers here. When I get to Turkey, I may repeat this and post a picture with peppers in it.
Ingredients:
- 1 aubergine
- 1 potato
- 2 large salad tomatoes
- 2-3 cloves of garlic
- Olive oil, 1 tablespoon
- Black pepper
- Salt
- Sunflower oil for frying
Preparation:
- Peel the aubergine in strips like pyjamas, cut in 4 length-wise and dice in cubes.
- Soak the aubergine cubes in very salty cold water for 10 minutes.
- Heat the frying oil.
- Peel the potato and dice in cubes.
- Fry in oil, take them to a plate onto tissue paper by the help of a slotted spoon.
- Sieve aubergines and line onto a tissue paper or tea towel and gently dry by patting.
- Fry the aubergines and take onto tissue paper.
- Peel the tomatoes and coarsely grate into a bowl or a saucepan. (If you find it hard to peel, dip the tomatoes in hot water for 5-6 seconds. The skins come off easily.)
- In a small saucepan, heat up olive oil and add grated tomatoes. Continue heating till it gets thicker.
- Add grated or sliced garlic to the tomato sauce, give it a swirl.
- Lay the fried potatoes and aubergines onto a serving plate, and decorate with tomato sauce.
- Enjoy while it is hot or even the next day, delicious warm or cold.
