BOREK WITH SODA WATER (Sodalı Börek)

Ingredients:
  • 4 yufka (or 6 filo pastry sheets)
  • 3 eggs
  • 250 mL soda water
  • 200 mL vegetable oil
  • 200 g white cheese (or feta)
  • Parsley

Preparation:
  • Chop the parsley and crumble the cheese, mix them together.
  • Whisk the eggs with oil.
  • Glace an oven tray.
  • Lay one layer of yufka and wipe with egg-oil mixture. (If using filo sheets, lay the second sheet as well and wipe with egg-oil.)
  • Lay another yufka, pour parsley-cheese mixture, distribute evenly.
  • Lay another yufka, wipe with egg-oil.
  • Lay the final layer of yufka. (If using the filo sheets, again add one more layer, so that there will be 3 layers under and 3 layers over the cheese fillings.)
  • Add soda water into the remaining egg-oil mixture, whisk all together and pour all over the borek.
  • Leave it to rest for 30 minutes.
  • Cook in 200°C for 30 minutes
