ROSE WATER (Gül Suyu)

If you are making Güllaç, you may want to make your own rose water as well. Or if you love roses like me and want more than the sight, they can appeal to all your senses. You will need red roses, we also tried yellow ones and it did not work. Wait for the rose to fully blossom and trim before it is still in full color. When trimming, a small trick; count the leaves and cut below the 7th leaf branch under the rose. This is what I was advised.

Ingredients:

  • Red rose petals, from 1 medium sized flower
  • Lemon salt, 3-4 crystals
  • Sugar, 100 g

  • Preparation:

  • Soak petals into cold water for half an hour. (This will rehydrate the petals.)
  • Wash the petals gently and fill into a jar.
  • Add sugar and lemon salt and fill in with 1L water.
  • Close the jar tightly and place in a window-sill where there is good exposure to sun. Leave the jar for 3 days without opening the lid and gently shaking once or twice a day.
  • After 3 days of waiting, open the jar, discard the leaves and store the rose water in the fridge. Enjoy cold.
