COWPEA (Börülce)

Cowpeas look like runner beans, but much slim and longer. They also cook much faster than the beans so an ideal appetizer. I love the cowpeas but they are rather rare, can only be found during the early summer months.


Ingredients:
  • Cowpeas, 1/2 kg
  • Olive oil
  • 1 lemon
  • Salt

  • Preparation:
  • Cut the tips of the cowpeas and wash. (I do not cut them into pieces but you can if you like.)
  • In a saucepan, bring plenty of water to boil, add the cowpeas and let them simmer 15-20 minutes until the color of cowpeas change.
  • Sieve.
  • On a flat plate, lay the cowpeas, sprinkle olive oil, salt and the juice of one lemon.
  • Enjoy warm or cold.
