COURGETTE PATTIES (Mücver)

Mücver is a word solely created for this dish and has no other meaning. The Turkish dictionary says, it is a kind of meatball (for the redundancy of the word meatball, please look at fellah kofte) made with courgette, flour, egg, cheese, dill, salt and spring onion. So you can have the recipe even from TDK* dictionary, only left to me is to give the amounts.


Ingredients:
  • 5 courgettes
  • 2 eggs
  • 4 spring onions
  • Parsley, half pack
  • Dill, half pack
  • 200 g flour
  • Baking powder, a teaspoon
  • 100 g white cheese (or feta)
  • Salt, a teaspoon
  • Black pepper, a teaspoon
  • Frying oil
Preparation:
  • Grate the courgettes (being the lazy bone, I used the food processor) and soak them in cold, salty water for 10 minutes.
  • Drain the courgettes and take them in a bowl by squeezing to rid of all the water. 
  • Add thinly sliced onions, dill, chopped parsley, crumbled cheese, flour, spices and baking powder and mix them all.
  • Heat up the frying oil. Grab an amount less than a spoon full, with the help of another spoon (dipping them in cold water makes the patties smoother) drop the patties in hot oil. 
  • Fry for 5-6 minutes on both sides, then take them out on a kitchen paper.


Alternatively:
  • Prepare the courgette dough same as before, but add 50 mL of vegetable oil.
  • Take spoonfuls and lay on an oven tray.
  • Cook in the oven at 150°C for 20-30 minutes (depending on the size of pieces).
  • Absolutely delicious.
