STUFFED PEPPERS (Dolma Biber)

This is a really easy recipe to make stuffed peppers because you don't need to precook the stuffing or the peppers.


Ingredients:
  • 10 green bell peppers
  • 300 g rice
  • 1 onion
  • 2 large tomatoes
  • 60 mL olive oil
  • Parsley
  • Salcha (or tomato paste) half tablespoon
  • Red pepper flakes, 1 teaspoon
  • Salt, 1 teaspoon
  • Black pepper, 1 tablespoon
  • 600 mL hot water
Preparation:
  • Remove the tops of peppers and clean the insides by removing the seeds.
  • Wash the rice, drain, and add to a bowl together with chopped onion and parsley.
  • Peel  off one tomato and chop into the bowl.
  • Into the bowl, also add oil, spices and mix them all together.
  • Stuff this mixture into the bell peppers by not stuffing too much. Fill in loosely or otherwise they burst and open, spilling their contents into the saucepan (advice comes from the experience!).
  • Cut the remaining tomato into rather generous slices which will serve as caps to the peppers.
  • Cover each pepper with tomato slices.
  • Align stuffed peppers into the saucepan. Make one pinch with a knife to the peppers (this helps them to cook better).
  • Add hot water and bring to boil.
  • When its boiled, put the lid on, cool in a low heat for 30 minutes.
  • Serve with yogurt.
