SPINACH WITH EGGS (Yumurtalı Ispanak)
Ingredients:
- 1/2 kg spinach
- 3 eggs
- 1 onion
- Salcha, 1 teaspoon
- Red pepper flakes (or paprika) 1 teaspoon
- Black pepper, 1 teaspoon
- 40 mL olive oil
Preparation:
- Soak spinach into hot water.
- In a rather wide saucepan add olive oil and finely chopped onion and roast for 5 minutes.
- Add salcha, red pepper, swirl once.
- Drain the spinach and add into the saucepan.
- Add salt, swirl once and cook on a low heat for 10 minutes with the lid on.
- Open 3 separate holes in the middle of spinach and into these, break the eggs.
- Pinch the yolks with a fork, sprinkle some salt, put the lid on and continue cooking for 5 minutes.
- Season only the eggs with black pepper.
- Serve and enjoy!
