SPINACH WITH EGGS (Yumurtalı Ispanak)


Ingredients:
  • 1/2 kg spinach
  • 3 eggs
  • 1 onion
  • Salcha, 1 teaspoon
  • Red pepper flakes (or paprika) 1 teaspoon
  • Black pepper, 1 teaspoon
  • 40 mL olive oil

Preparation:
  • Soak spinach into hot water.
  • In a rather wide saucepan add olive oil and finely chopped onion and roast for 5 minutes.
  • Add salcha, red pepper, swirl once.
  • Drain the spinach and add into the saucepan.
  • Add salt, swirl once and cook on a low heat for 10 minutes with the lid on.
  • Open 3 separate holes in the middle of spinach and into these, break the eggs.
  • Pinch the yolks with a fork, sprinkle some salt, put the lid on and continue cooking for 5 minutes.
  • Season only the eggs with black pepper.
  • Serve and enjoy!
