BONY MEAT MEAL

For this meal we need meat with bones. It can be any meat, beef, lamb, pork but its best to have some bones in it for its contribution to the taste. A rib, loin chops, cutlets, even shanks can be a good solution. I used loin chops this time.


Ingredients:
  • 1/2 kg meat with bones
  • 5-6 shallots
  • Garlic, 6 cloves
  • 2 Green pointy pepper
  • Salcha (or tomato paste), Half teaspoon  
  • Red pepper flakes (or paprika), a teaspoon
  • Salt, a teaspoon
  • Thyme, 2 leaves or half teaspoon when chopped
  • Rosemary -optional-
  • 50 mL olive oil

Preparation:
  • Add oil, garlic, meat into a saucepan and roast for 10 minutes.
  • Peel off the shallots, dice the green pepper and add into the saucepan, roast for another 5 minutes.
  • Add salcha, spices, salt and 1 liter hot water.
  • Cook on a low heat, with the lid on for 45 minutes by mixing at intervals.
  • In the last 10 minutes, add the thyme.
  • You can check if the meat is cooked well by pinching with a fork. If the meat comes off the rib easily, then it must be cooked.
