PUMPKIN DESSERT (Kabak tatlısı)

There has never been an occasion where there is a pumpkin dessert that I see and don't eat. I adore this indulgence. It is best made in Bolu, Turkey, I happened to stop in Bolu just to eat this dessert.


Ingredients:
  • 3 large slices of pumpkin (like the melon slices sold in the store)
  • 200 g sugar
  • 150 mL water
  • Lots of walnuts (really, depends on how much you like them)

Preparation:
  • Dice the pumpkin in large cubes by first peeling off the outer, hard shell.
  • Align them in a wide saucepan.
  • Sprinkle the sugar all over.
  • Add water.
  • Bring to boil on a low heat, when it boils, put the lid on.
  • Cook 20 minutes on a low heat. (Do not mix, so not to burn them, put on a real low heat.)
  • Transfer to a serving plate with a slotted spoon.
  • Decorate with chopped walnuts.
