GREEN LENTIL SALAD

A salad which will support many of your five-a-days and also a whole meal itself. Highly suitable for vegetarians and for vegans as well.


Ingredients:
  • 250 g green lentil
  • 2-3 small tomatoes
  • 3 spring onions
  • 15 g parsley
  • fresh mint
  • Half cucumber 
  • A pointy green pepper 
  • Olive oil, salt
  • Half lemon juice
(In the picture above, there is no pepper or cucumber in the salad because I couldn't find them in the store!)

Preparation:
  • Wash the lentils throughly.
  • Boil in a liter of water until lentils soften. (There are several clues to know if they are ready: first water darkens and almost blacken; second lentils lose their colors and become actually green. And lastly if you take one or two lentils with a spoon and if you can smash it with your finger, it means they're cooked.)
  • Chop all the other vegetables roughly.
  • Drain the lentils (I pass them under tap water at this stage too).
  • Mix all in a deep bowl, drizzle with olive oil, salt and with a juice of a half lemon.
  • Serve and enjoy!
