COURGETTE WITH CHICKEN (Tavuklu Kabak )



Ingredients:
  • 4 courgettes
  • 200 g chicken breast
  • 1 tomato (or tomato paste)
  • 2 green pointy peppers (where available)
  • 1 teaspoon blackpepper
  • Dill, 5-6 branch (or parsley)
  • 40 mL olive oil
  • Chicken stock pot or cube
  • Grated cheese (kaşar, cheddar or parmesan)

Preparation:
  • Dice the chicken breast into small cubes. Roast on a pan by themselves for 5-6 minutes.
  • Add to the pan, olive oil, tomato, peppers and continue roasting.
  • Add chicken stock pot, continue roasting until all comes homogenous.
  • Add black pepper, salt, and dill (while using stock pots or cubes be careful in adding spices and salt because the stocks are already seasoned).
  • Turn off the heat and let the chicken rest for 5-10 minutes.
  • Meanwhile, peel off the courgettes and  slice in circles. Align half of them in an oven tray.
  • Pour the chicken onto the courgette layer.
  • Align the remaining courgettes on top, covering the chickens. 
  • Sprinkle generously the grated cheese.
  • Cook in 200°C for 30 minutes.
