LETTUCE SALAD (Marul salatası)

This salad is so healthy, you can even tell from the colors. How red tomatoes shine over the green lining of the lettuce, and the spring onions are only the icing on the cake. I think this is the perfect combination of three simple yet quintessential ingredients: they're never posh but you cannot imagine a kitchen without them.


Ingredients:
  • Lettuce (I prefer baby lettuce wherever I find them, but all lettuce will do)
  • Tomato (always use a vine ripened tomato for better taste)
  • Spring onions
  • Olive oil, salt

Preparation:
  • Remove the outer leaves of lettuce. Tear the remaining leaves and wash throughly. I usually soak them in a bowl full of water and 2-3 tablespoons of vinegar for 10-15 minutes. Lettuce can be bearing some nasty microbes but nothing you cannot get rid of after a good wash.
  • Squish the lettuce leaves out of the water and slice them in rather thin slices.
  • Chop the tomatoes in big chunks.
  • Slice the spring onions.
  • Mix them all together, flavor with olive oil and salt.

Both the Romans and Egyptians took advantage of this property by eating lettuce at the end of a meal to induce sleep.
