GULLACH (Güllaç)
Here is my favourite dessert. Güllaç sheets are sold only during Ramazan month, so this is a Ramazan-dessert. I will not give the recipe for the güllaç sheets, they should be done by professionals and be bought. You can find these sheets in Turkish markets. How these sheets are produced can be seen through this link. After you obtain the sheets, the preparation of this dessert is pretty much easy, at least no cooking is involved. I modified the usual making of güllaç, in my own way. So here it is, enjoy!
Ingredients:
Güllaç sheets, 200 g
Sugar, 250 g
Low fat milk, 1.5 liter
Rose water*, 4 table spoons
Walnuts, 200 g
Pomegranate seeds or red currants
Preparation:
In a saucepan, add all of milk and sugar, bring to boil by stirring.
Immediately after it comes to boil, transfer the sugar-milk into a bowl and start stirring to cool it down a little bit. The milk should be warm, just cool enough to touch by hand. Now add the rose water into the milk.
Take the sheets from its package and align onto a tray, one by one. If your tray is not wide enough to accommodate the sheets, you can break them into pieces and then align in layers.
Lay one sheet and pour milk enough to wet the sheets.
Half way through the sheets, sprinkle half of the crushed walnuts.
Continue laying the sheets into layers and in between each layer, pour milk.
When all the sheets are finished, pour the remaining milk all over the tray.
Sprinkle the remaining crushed walnuts and decorate with pomegrenate or with red-currants. (If you are using frozen fruits, it is better to sprinkle them without defrosting. That keeps the colors intact.)
Keep the dessert in the fridge at least an hour, the enjoy cold.
*: Rose water that we use for this recipe should be pure. Most of the rose water that is on the markets are for cosmetic purposes and contain many other things in it. The one we need must contain only rose and water, and nothing else. It is a bit challenging to find such a product so what I found was a beverage with rose, water, sugar and cinnamon in it. It was a beverage so I thought it would be harmless to put into dessert.
