SIMPLEST BOREK (En Kolay Börek)

Simplest borek is not an official name obviously, I just made it up. But really this borek is very very simple. You may use yufka or filo pastry but it needs to be very thin. Today I found a yufka in Waitrose by a brand named Sofrabrick. They named it as "feuilles de filo" which were very thin and (after cooking) crispy. So search for yufka/filo pastry/feuilles de filo and then start making your borek. Naturally, if you are an advanced Turkish cook, you can make your own yufkas starting from flour and starch but then it won't be the simplest borek.


Ingredients:
  • Yufka
  • 1 egg
  • Vegetable oil
  • White cheese (feta)
  • Parsley

Preparation:
  • Set the oven to 200°C and glaze the oven tray with oil.
  • Lay one piece of yufka (feuilles de filo were very thin so I used two sheets at a time), and glaze with oil.
  • Chop the parsley and mix with crumbled cheese.
  • Take two spoonfuls of cheese-parsley mixture and lay onto the yufka sheet.
  • Fold the yufka sheet and roll over. Then tuck the loose ends inside making a simple loop. (Since this is the simplest borek, you can actually give any shape you like but a loop would prevent cheese from leaking out.)
  • Repeat above steps till you finish all the yufka sheets and/or cheese-parsley mixture.
  • Whisk an egg with a little oil, spread this over the borek loops.
  • Cook for 20-25 minutes.
