FRIED BOREK (Sigara Böreği)
Another tea time special, so easy to prepare, ideal for breakfasts.
Ingredients:
- Yufka
- White cheese (feta)
- Frying oil
Preparation:
- Cut your yufka in a triangle shape. Yufka usually has a circle shape but if you're living abroad you'll probably end up buying filo pastry sheets, so different shapes are given below.
- Crumble the cheese and line up on the outer edge of the triangle. Fold the pastry/yufka from the edges and start rolling to the pointy edge.
- 2 cm before the end, dip the tip of the pastry/yufka in water (in a small bowl) and continue rolling. (Water will seal the tip so it won't be opened during frying.)
- Heat up oil in a pan and deep fry the borek rolls. Wait until the oil gets really hot so that when you drop one of the boreks, it sizzles. It takes only 2-3 minutes to fry them on all sides.
