LEEKS WITH OLIVE OIL (Pırasa yemeği)
Ingredients:
- Leeks, 1/2 kg
- One carrot
- Salcha, one tablespoon
- Rice, two tablespoons
- Olive oil, 40 ml
- Salt, one teaspoon
- Ground Red pepper, half teaspoon
- Boiled water, 400 ml
- Lemon juice
Preparation:
- Peel off the first outer leaves of leeks. Dice into two-three cm thick slices.
- Immense the leeks in a pot with hot water for ten minutes.
- Peel the carrot, slice into two vertically and dice into one cm slices.
- In a pan, add olive oil, salcha and pepper and cook with a low heat until salcha and oil come together.
- Drain the leeks and add to the pan with the carrot.
- Add the salt, cook for 10 minutes with the lid on by mixing twice, gently with a wooden spoon.
- Add boiled water, mix briefly, and cook for another 15 minutes on low heat.
- Wash and drain the rice, add to the pan, cook for a further 7 minutes.
- Serve either hot or cold, as you wish, with a sprinkle of lemon juice.
